A Week of Unordinary Breakfasts: Saturday

Hey folks! I am reposting a series of posts I did last year on another blog that I don’t use anymore. It was called “A Week of Unordinary Breakfasts”. I decided to make something a little unusual each morning for one week to break up the morning yogurt routine =) Enjoy the photos and some tasty recipes!

Since I had a breakfast date with some long lost friends, I wasn’t able to make a super unusual breakfast. But I did have something a little out of the ordinary at the “Roast and Toast Cafe”: Breakfast egg wrap with bacon, cheddar, onions, and….. Avocado! It’s so good. Along with a side of spicy potatoes and oranges. Not terribly out-of-the-ordinary, but a little different so I’ll let it slide.

I think today, Sunday, ends my unordinary breakfast week. I never thought about if I wanted to do a 7 day week, a school week, a work week… Haha. Well this morning was sort of unordinary.  Pumpkin Oatmeal. The first time I made pumpkin oatmeal I fed it to the dog. That was last year. This year it has sounded sooo good and I finally made it! No recipe because I didn’t use one. Oatmeal+Pumpkin Puree+Maple Syrup+ Cinnamon Sugar+Nutmeg+Ginger. Topped off with raisins, dried cherries and toasted maple walnuts. Nom. Also ate an apple with PB, honey and nutmeg.

I got up early this morning to make Closet Cooking’s Mango and Banana Pancakes. Sadly, I couldn’t scrounge up any Cardamon in the kitchen so I was missing that ingredient. I like my pancakes a little thinner, so I thinned the batter out with a little extra milk. Bad idea. This recipe, with the mashed banana and mango, wasn’t meant to be thinned. They wouldn’t cook properly… Even after I added extra flour. They were still tasty with chopped mango ad banana on top drizzled with maple syrup, but I won’t be making them again. Maybe an only banana variation with mangos on top, but I couldn’t taste the mango in the pancake itself. Worth a try, but not a repeat.

{Breakfast}

3 small mango banana pancakes
1/2c Chopped mangoes and bananas
1TB Maple Syrup
1 small protein bar, because I was feeling protein-deprived with all the carbs in the pancakes and fruit.

I woke up at 6:30 this morning to cram study for a test, read my Bible and…… make Huveos Rancheros! Yummmmmm. Another new favorite breakfast. I loosely followed a recipe I found on Smitten Kitchen, found here.

Mmm, Tony’s Creole. This is a staple at my house.

More deliciousness. I found these peppers at Meijer the other day. Inexpensive and good! From the looks of them they would burn a hole in your mouth bigger than the grand canyon, but they are not hot AT ALL- super sweet and great for breakfast!

Just like in Mexico…. Carbtillas. =P

Black beans, peppers and corn with some chili powder, Tony’s and salt.

After try #3 ( 1 and 2 were conveniently fed to the father ;) ) I finally figured out how to keep the egg ON THE TORTILLA!!

I’ll be honest, I didn’t want to make this for breakfast. I wanted pumpkin oatmeal. With walnuts. And maple syrup. But no, I’d already had that before therefore disqualifying it from the “unordinary” category. I had another recipe, Quinoa with Pomegranate. Quinoa? I eat that with chicken. We had pomegranates in the house, although. So I made it.

Let’s just say this:

Liv takes first bite, “Wow!! This is actually realllllly good!”
